Harvest
Manual harvesting by plot and at full maturity (no over maturity).Sorting on the vine, sorting in the cellar. 100% de-stemming. Temperature control by Carboglace.
VINIFICATION
Vinification in a 32 hl stainless steel wine cellar, allowing a parcel by parcel management and a fine thermoregulation. Separate grape varieties.Cold maceration and temperature elevation over 4 to 7 days. Native yeasts.
No pumping over. Full manual punching of the cap for each wine, for a very fine and controlled extraction during the whole fermentation.
Gentle gravitational run-off. Pressed wine, pressed at 50 bars, separated.
Malolactic fermentation in barrels on lees. Light stirring. Minimum sulphiting.
Ageing
Maturing of " MONS DELAUNAY " : 24 to 36 months depending on the vintage, in new barrels:Radoux Blend, Remond Jupile. Open bung topping.
Presentation
Bottled at the Château (bottler SOCOBLA, iso 9001)Bottle : Grand cru exception.
Stopper : 44/24 of first quality. Pewter style cap.
Outstanding. Pure and mouthcoating, with lovely plum sauce, roasted fig and blackberry coulis flavors that give way to subtle chalk and tobacco notes on the finish. Drink now through 2018.- J. Molesworth
