The Cuvée Demoiselles comes from two parcels located on the limestone plateau of Coutet, in the place called "Peycocut". The master plots of Coutet are referenced in the first Jurade book of 1453 and have belonged to the same family since at least 1680.

Culture : Ploughing with horse, four ways and maintenance, with the will to work at the minimum, in the concern to preserve the structure essential to the micro-life of the soil.
Grape varieties : Merlot with red tail 50% Bouchet (Cabernet Franc) 50%.

Vat room : Wooden vat
Vinification : AF under native yeast/ punching down/ MLF under native bacteria.
Ageing : 30% new barrels / 70% blond barrels (one wine)
